An innovative exhibition on the global impact of food by Center for Genomic Gastronomy

Center for Genomic Gastronomy presents its latest exhibition “New National Dish: UAE”, running January 24 – April 4, 2020 at Warehouse 48, Dubai. This project consists of a set of stories, recipes, tasters, and flags detailing four directions that the national dish (and by extension the nation) may take due to the environmental, economic and social impacts of climate change. In this forecasting piece, the artist collective from Center for Genomic Gastronomy imagines the elements of a New National Dish for the UAE based on the principle concept that eaters shape the Earth through the foods and stories we celebrate, cultivate, and propagate. Over the next 30 years, recipes will adapt to ecological challenges, political and economic uncertainty, and changes in supply chains. The exhibition makes the viewers wonder how, in turn, these elements of the food system will change based on new preferences, tastes and stories.
