Fermento is a neighbourhood bar in Bologna’s Bolognina district, founded by the Cobbe brothers from Taranto in close connection with the area’s social and cultural scene. Together with a longtime friend, they’ve created a convivial, well-loved spot that has quickly become a local reference point.
The focus is on a well-curated selection of craft beers, wines, and both classic and contemporary cocktails. Food is simple and informal, reflecting the owners’ Apulian roots: friselle and taralli are staples, served alongside Pasquini’s distinctly Bolognese cured meats.
