Niccolò Gozza is the Bolognese chef who, after five years of experience in Lombardy’s capital and a few trips to Thailand and Mexico, decided to bring his revisited popular cuisine to Mercato Albani. The chef uses poor ingredients, sourcing them from small, quality producers and rejuvenating some traditional dishes.
