Nestled in the heart of Paris, Café des Ministères is a neighborhood bistro celebrated for its traditional French dishes with a South-Western flair. Chef Jean Sévègnes applies his mastery of haute cuisine to the bistro format, delivering refined classics without pretension. Signature dishes such as the vol-au-vent with sweetbreads, poultry, and truffle jus and the stuffed Pontoise cabbage have made this bistro a must-visit, often requiring advance reservations.
The menu changes with the seasons: in winter, the vol-au-vent features poultry, veal sweetbreads, spinach, and black truffle, while summer brings lamb sweetbreads and lobster, spring highlights morels and green asparagus, and autumn showcases cep mushrooms. Other notable dishes include coquilles Saint-Jacques with duchess potatoes, escargots with bone marrow, foie de volaille terrine with Black Pork from Bigorre, and classic desserts like pavlova, Alain Chapel’s chocolate cake, or vanilla Parisian flan.
