At the helm is Tuscan-born chef Michele Farnesi, whose Italian heritage blends seamlessly with Parisian cosmopolitan flair and solid French technique. The name Dilia is a tribute to his ancestors, Dino and Illia, and the cooking reflects the same sense of heritage – expect Italian inspiration without clichés: pillowy beetroot gnocchi with sage and raw scallop shavings, handmade pasta with bottarga and garlic bread, or roasted pigeon, all crafted with seasonal ingredients and a meticulous touch.
