At his restaurant on Rue Traversière, near Bastille, chef Giovanni Passerini creates a dialogue between Roman trattoria tradition and the sophistication of contemporary French bistronomy. The menu features deeply rooted Italian flavours elevated with technique and creativity: his signature trippa alla romana, always on the menu, embodies his philosophy of honest cooking, while dishes like pasta e fagioli with shrimp, monkfish with oysters and seaweed vinaigrette, and a striking porcini salad with peach, tomato, and miso sabayon reveal a thoughtful balance of rusticity and refinement. Sharing plates are a house signature, with whole-roasted pigeon or lobster served in multiple courses, paying homage to grand French dining rituals while remaining distinctly Italian in spirit.

The atmosphere is lively and informal, with floor-to-ceiling windows and an open kitchen, while the cuisine transports diners straight to Rome. The extensive wine list showcases an eclectic mix of natural wines, Italian classics, and carefully chosen French labels.
