Prévelle
Housed in the intimate former Garance space, Prévelle is both a destination for discerning diners
In the quiet Invalides district, Prévelle offers a deeply personal gastronomic haven where chef Romain Meder celebrates instinctive cuisine rooted in nature and heritage. Named after a lieu-dit in his native Haute-Saône, Prévelle is a tribute to his roots and a culmination of his culinary journey. Meder’s cuisine is intuitive, seasonal, and deeply connected to the land, shaped by long-standing relationships with farmers, foragers, and artisans. Expect plates that feel like snapshots of a moment—wild herbs, forgotten roots, and pristine produce woven into elegant, modern compositions.
The wine program, led by Vincent Cochard (formerly of L’Arpège), mirrors this philosophy with a French-only cellar highlighting vignerons of character, offering pairings that evolve in dialogue with the kitchen. Housed in the intimate former Garance space, Prévelle is both a chef’s refuge and a destination for discerning diners—a gastronomic experience of rare sensitivity and depth.
