Noma
Noma is a restaurant and food innovation laboratory founded by chef René Redzepi and Claus Meyer in Copenhagen. It was conceived as an intimate ‘culinary village’ where diners can experience an innovative reinterpretation of Nordic gastronomy while enjoying views of the surrounding nature and water.
The heterogeneous complex, which employs a variety of building materials and construction methods, evokes the archetypal form of an Arctic village. The interiors allude to vernacular elements of Nordic design, while the glass-covered paths between the ‘buildings within the building’ allow chefs, staff and guests to experience the changing atmosphere throughout the day and year. The complex is set within a carefully tended garden designed in accordance with the ecological principles of permaculture.
