Uformel
Located a short walk from Copenhagen’s City Hall Square, Uformel opened in 2014 as the more relaxed younger sibling of Michelin-starred formel B. Conceived as an alternative to traditional fine dining, it combines accomplished cooking with an informal atmosphere and a lively soundtrack.
The cuisine retains formel B’s focus on precise technique and clearly defined flavours, while taking a freer, more playful approach influenced by Asian ingredients and seasonings. Guests can opt for a five-course menu composed by the head chef or create their own from an à la carte selection of around 10 – 12 dishes, with four to six recommended per person. Seasonal vegetables play an important role, and vegetarian and vegan menus can be prepared on request.
The wine programme is overseen by sommelier Martin Iuel-Brockdorff Bek and includes an accompanying pairing as well as an extensive list ranging from classic regions such as Champagne, Burgundy and Piedmont to lighter, more contemporary styles.
