Dolada 1921

In the heart of Alpago overlooking the striking Lake Santa Croce, Dolada 1921 is Italy’s oldest Michelin-starred restaurant, a title it has held since 1969. Founded in 1921 by the De Prà family, this historic house in Plois di Pieve d’Alpago blends mountain tradition with contemporary sensibility, shaped today by the creativity of chef Riccardo De Prà.

The cuisine is rooted in the family’s own farm and the flavours of the territory – classic Alpine ingredients elevated through modern technique. Signature dishes include Riccardo’s famed carbonara, made with ancient-grain spaghettini, handcrafted guanciale, artisanal pecorino, and a perfectly cooked egg inspired by Japanese methods; the “dirty tartare” of venison and duck yolk; delicate warm lemon spaghetti with char and shrimp; and refined interpretations of local meats and vegetables.
