Expendio de Maíz is a hidden gem in La Roma neighborhood, offering a unique dining experience that celebrates the rich tradition of maize-based cuisine. Tucked between two other establishments with no visible sign, the restaurant invites diners to gather around one of four long tables on the covered sidewalk, with seating available on a first-come, first-served basis.
There is no menu at Expendio de Maíz—instead, diners are treated to a surprise tasting experience. The food focuses on the versatility of heirloom corn, which is nixtamalised and ground in-house. One standout dish is a huarache made with warm, crisped yellow masa, topped with braised beef, avocado, cherry tomatoes, queso blanco, and fresh greens.
Chef Jesús Tornés brings the flavours of the rural kitchen from his village in the state of Guerrero, to the heart of the city. With a wood-fired comal, clay pots, and produce from his own garden, Tornés combines the humble, traditional methods of his upbringing with modern sensibilities of Mexico City. The result is a creative fusion of rustic Mexican cooking and innovative spirit of the capital.
