Maroma offers contemporary cuisine focused on the local product. They use avant-garde culinary techniques and take advantage of the best ingredients Mexico can offer, resulting in a unique, accessible and delicious experience.
Founded in 2016 in Roma, Meroma is a family project led by chefs Mercedes Bernal and Rodney Cusic. Both graduates of the International Culinary Center in New York, Mercedes and Rodney honed their skills and gained valuable experience before bringing their vision to Mexico City.
The kitchen embraces a contemporary approach, blending diverse techniques with a deep appreciation for the rich flavours of Mexican land and sea. The restaurant’s philosophy is grounded in a commitment to sustainability, seeking out ingredients that support the local environment.
The ground-floor bar offers a perfect introduction to Meroma’s concept, serving drinks inspired by timeless classics from the golden era of cocktail culture, carefully selected wines, and a selection of signature snacks.
