Founded in 2016 in Roma, Meroma is a family project led by chefs Mercedes Bernal and Rodney Cusic. The kitchen embraces a contemporary approach, blending diverse techniques with a deep appreciation for the rich flavours of Mexican land and sea. The restaurant’s philosophy is grounded in a commitment to sustainability, seeking out ingredients that support the local environment.
The ground-floor bar offers a perfect introduction to Meroma’s concept, serving drinks inspired by timeless classics from the golden era of cocktail culture, carefully selected wines, and a selection of signature snacks.
