Pujol

Pujol, Chef Enrique Olvera’s first restaurant, opened its doors in May 2000 with the mission to transform Mexican cuisine into an art form. Known for its ever-evolving cuisine, Pujol centers around three pillars of Mexican culture—corn, seafood, and vegetables. Traditional Mexican techniques are reimagined with a contemporary, imaginative perspective. The restaurant’s philosophy values working with the highest quality producers and artisans, maintaining a deep commitment to sustainability, and offering a unique hospitality experience that feels distinctively Mexican.

With two tasting menus, each showcasing seven dishes, diners can experience the true essence of Mexico: one focused on corn and the other on seafood. Alternatively, the taco counter offers an ever-evolving experience where the chef’s creativity takes center stage.
