Wabi Sabi
Restaurants Wabi Sabi, initiated by the Japanese chef Shuji Hiyakawa, take their name from the Japanese philosophy of researching beauty into imperfection. Grown-up inside his father’s noodle shop in Japan, chef Hiyakawa decided to bring his expertise in Japanese cuisine to Miami, founding Wabi Sabi by Shuji at 851 NE 79th Street. Then, a second restaurant opened, Wabi Sabi Time Out Market, in 1601 Drexel Avenue, Miami Beach.
The restaurant’s proposal is based on a few customisable basic alternatives, with a strong focus on the quality of the ingredients and the preparation processes.
A third restaurant is about to open in Wynwood District (Wabi Sabi Wynwood), in 2700 N. Miami Avenue.
