Bistrot

Clamato

Clamato is the younger sibling of neighbouring Septime, offering a more relaxed take on the group’s approach to seasonal dining. Open Monday to Sunday and operating on a first-come, first-served basis, the informal seafood bistrot builds its menu around daily deliveries from Saint-Jean-de-Luz, Concarneau, Île d’Yeu and other coastal regions.

Produce is sustainably sourced using traditional fishing methods, while the oysters are either wild or grown from natural spat. The regularly changing menu follows the day’s catch, from Normandy oysters and clams in pil-pil-style sauce to cockles from Batz-sur-Mer with smoked butter, Dieppe whelks with aïoli, Galician sea urchins, Oléron cuttlefish with sesame and chilli, or grey mullet ceviche with squash and coriander.

Vegetable-led dishes also feature alongside the seafood, accompanied by sourdough bread and butter. The wine list focuses largely on natural wines. When the tables are full, seats at the counter overlooking the open kitchen offer an equally lively alternative.
