Prévelle
Housed in the intimate former Garance space, Prévelle is both a destination for discerning diners
Prévelle is chef Romain Meder’s first restaurant of his own, set near Les Invalides in Paris. After more than twenty years in some of France’s leading kitchens, including Alain Ducasse au Plaza Athénée, Meder has created a more personal and intimate place, conceived almost like his own country house. Named after La Combe au Prévelle, the hamlet in Haute-Saône where he grew up, the restaurant reflects his rural roots and close connection to nature.
Meder’s cuisine is instinctive and seasonal, often beginning with vegetables or fruit, with fish and meat used more sparingly. The menu is shaped by long-standing relationships with more than 140 farmers, fishermen and artisans, while the wine list brings together distinctive producers, from classic appellations to natural wines.
