The cuisine is modern, seasonal, and largely plant-forward, with a tasting menu that changes regularly according to the best produce available from the Île-de-France and carefully selected responsible suppliers. Grébaut’s cooking is precise and creative without feeling overly formal, often giving vegetables a central role while using fish and meat with restraint.
The restaurant’s understated dining room reflects the same philosophy, with raw wood tables, large workshop-style windows, and a relaxed atmosphere that feels more like a neighborhood bistro than a traditional fine dining room.
